Certainly! A vegetable beef soup is a comforting and nutritious dish that’s perfect for cold days or when you’re craving something hearty. Here’s a simple recipe for a delicious vegetable beef soup:

Ingredients:

  • 1 lb (450g) beef stew meat, cut into bite-sized pieces
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, peeled and diced
  • 2 stalks celery, diced
  • 1 cup (150g) green beans, trimmed and cut into bite-sized pieces
  • 1 can (14.5 oz) diced tomatoes
  • 6 cups (1.5 liters) beef broth
  • 2 potatoes, peeled and diced
  • 1 teaspoon dried thyme
  • Salt and pepper, to taste
  • 2 tablespoons olive oil

Instructions:

  1. Heat the olive oil in a large pot or Dutch oven over medium heat. Add the diced onions and cook until they are soft and translucent, about 5 minutes.
  2. Add the minced garlic to the pot and cook for another 1-2 minutes, until fragrant.
  3. Increase the heat to medium-high and add the beef stew meat to the pot. Cook the meat until it is browned on all sides, about 5-7 minutes.
  4. Once the meat is browned, add the diced carrots, celery, green beans, and potatoes to the pot. Stir to combine everything.
  5. Pour in the diced tomatoes (including the juices) and beef broth. Add the dried thyme, and season with salt and pepper to taste.
  6. Bring the soup to a boil, then reduce the heat to low and let it simmer uncovered for about 30-40 minutes, or until the vegetables are tender and the meat is cooked through.
  7. Taste and adjust the seasoning with more salt and pepper if necessary.
  8. Once the soup is ready, ladle it into bowls and serve hot. You can garnish with fresh parsley or grated Parmesan cheese if desired.
