Here’s a refreshing Mango Salad recipe that’s perfect for a light and flavorful meal:

Ingredients

  • 2 ripe mangoes, peeled and diced
  • 1 red bell pepper, diced
  • 1 cucumber, diced
  • 1/4 red onion, thinly sliced
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup fresh mint leaves, chopped
  • 1 small red chili, finely chopped (optional, for heat)
  • 1/4 cup roasted peanuts, chopped (optional)

For the Dressing:

  • 3 tablespoons lime juice
  • 2 tablespoons fish sauce (or soy sauce for a vegetarian option)
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon sesame oil

Instructions

  1. Prepare the Ingredients:
    • Peel and dice the mangoes.
    • Dice the red bell pepper and cucumber.
    • Thinly slice the red onion.
    • Chop the fresh cilantro and mint leaves.
    • Finely chop the red chili, if using.
    • Chop the roasted peanuts, if using.
  2. Make the Dressing:
    • In a small bowl, whisk together the lime juice, fish sauce (or soy sauce), honey (or maple syrup), and sesame oil until well combined.
  3. Assemble the Salad:
    • In a large bowl, combine the diced mangoes, red bell pepper, cucumber, red onion, cilantro, mint leaves, and red chili.
    • Pour the dressing over the salad and toss gently to combine, ensuring all the ingredients are evenly coated.
  4. Serve:
    • Sprinkle the chopped roasted peanuts over the top, if using.
    • Serve immediately or let it chill in the refrigerator for 15-20 minutes to allow the flavors to meld.
