KEY LIME POUND CAKE WITH KEY LIME CREAM CHEESE ICING

Here’s a recipe for Key Lime Pound Cake with Key Lime Cream Cheese Icing:

Ingredients

For the Cake:

  • 3 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1/2 cup vegetable shortening
  • 3 cups granulated sugar
  • 6 large eggs
  • 1 cup whole milk
  • 1/4 cup key lime juice
  • 1 tablespoon key lime zest
  • 1 teaspoon vanilla extract

For the Key Lime Cream Cheese Icing:

  • 8 oz cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 3 cups powdered sugar
  • 2 tablespoons key lime juice
  • 1 teaspoon key lime zest
  • 1 teaspoon vanilla extract

Instructions

For the Cake:

  1. Preheat the Oven:
    • Preheat your oven to 325°F (163°C).
    • Grease and flour a 10-inch bundt pan or tube pan.
  2. Prepare the Dry Ingredients:
    • In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. Cream the Butter and Sugar:
    • In a large bowl, beat the softened butter and vegetable shortening together with an electric mixer until creamy and smooth.
    • Gradually add the granulated sugar, beating until light and fluffy.
  4. Add the Eggs:
    • Add the eggs one at a time, beating well after each addition.
  5. Combine Wet and Dry Ingredients:
    • Gradually add the flour mixture to the butter mixture, alternating with the milk, beginning and ending with the flour mixture. Mix until just combined.
    • Stir in the key lime juice, key lime zest, and vanilla extract.
  6. Bake the Cake:
    • Pour the batter into the prepared bundt or tube pan.
    • Bake for 75-85 minutes, or until a toothpick inserted into the center of the cake comes out clean.
    • Let the cake cool in the pan for 10-15 minutes, then turn it out onto a wire rack to cool completely.

For the Key Lime Cream Cheese Icing:

  1. Make the Icing:
    • In a large bowl, beat the softened cream cheese and butter together until smooth and creamy.
    • Gradually add the powdered sugar, one cup at a time, beating well after each addition.
    • Stir in the key lime juice, key lime zest, and vanilla extract until well combined.
  2. Ice the Cake:
    • Once the cake is completely cool, spread or drizzle the key lime cream cheese icing over the top of the cake.
    • Allow the icing to set before serving.
