Garlic Herb Potatoes and Steak Skillet

Ingredients

  • For the Potatoes:
    • 1 lb (450g) baby potatoes or small Yukon Gold potatoes, halved or quartered
    • 2 tablespoons olive oil
    • 1 teaspoon garlic powder
    • 1 teaspoon dried rosemary
    • 1 teaspoon dried thyme
    • Salt and black pepper, to taste
  • For the Steak:
    • 1 lb (450g) sirloin or ribeye steak, cut into strips or bite-sized pieces
    • 2 tablespoons olive oil
    • 2 cloves garlic, minced
    • 1 teaspoon dried rosemary
    • 1 teaspoon dried thyme
    • Salt and black pepper, to taste
  • For Garnish (optional):
    • Fresh parsley, chopped

Instructions

  1. Cook the Potatoes:
    • Preheat your oven to 400°F (200°C).
    • In a large bowl, toss the halved or quartered potatoes with olive oil, garlic powder, dried rosemary, dried thyme, salt, and black pepper until well coated.
    • Spread the potatoes in a single layer on a baking sheet.
    • Roast in the preheated oven for 20-25 minutes, or until the potatoes are golden brown and tender, stirring halfway through.
  2. Cook the Steak:
    • While the potatoes are roasting, heat 2 tablespoons of olive oil in a large skillet over medium-high heat.
    • Add the steak strips or pieces to the skillet. Season with garlic, dried rosemary, dried thyme, salt, and black pepper.
    • Cook the steak for 3-4 minutes per side, or until cooked to your desired level of doneness. Remove the steak from the skillet and set aside.
  3. Combine and Finish:
    • Once the potatoes are done roasting, remove them from the oven and add them to the skillet with the steak.
    • Toss everything together gently to combine and heat through.
  4. Serve:
    • Garnish with chopped fresh parsley if desired.
