Avocado Lox Toast

Ingredients

  • 2 slices of your favorite bread (sourdough, rye, whole grain, or bagel halves work well)
  • 1 ripe avocado
  • Juice of 1/2 lemon
  • Salt and black pepper, to taste
  • 4 oz smoked salmon (lox)
  • 1/4 small red onion, thinly sliced
  • 1 tablespoon capers, drained
  • Fresh dill or chives, chopped (optional, for garnish)
  • Everything bagel seasoning (optional, for garnish)

Instructions

  1. Toast the Bread:
    • Toast the slices of bread to your desired level of crispiness.
  2. Prepare the Avocado:
    • Cut the avocado in half, remove the pit, and scoop the flesh into a bowl.
