Chicken with Garlic Parmesan Rice

Ingredients

For the Chicken:
  • 4 boneless, skinless chicken breasts
  • Salt and black pepper, to taste
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 2 tablespoons olive oil
For the Garlic Parmesan Rice:
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1/2 cup grated Parmesan cheese
  • 3 cloves garlic, minced
  • 2 tablespoons unsalted butter
  • Salt and black pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Prep the Chicken:
    • Season the chicken breasts with salt, black pepper, paprika, garlic powder, and onion powder.
  2. Cook the Chicken:
    • Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook for 5-7 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
  3. Prepare the Garlic Parmesan Rice:
    • In the same skillet, reduce the heat to medium. Add the minced garlic and sauté for 1-2 minutes, until fragrant.
    • Stir in the rice, coating it with the garlic and oil. Cook for 1-2 minutes, stirring frequently.
  4. Add the Broth:
    • Pour in the chicken broth, stirring to combine. Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 15-20 minutes, or until the rice is tender and the liquid is absorbed.
  5. Finish the Rice:
    • Once the rice is cooked, stir in the grated Parmesan cheese and butter until melted and well combined. Season with salt and black pepper to taste.
  6. Serve:
    • Slice the cooked chicken breasts and serve them over the garlic Parmesan rice. Garnish with chopped fresh parsley for a pop of color.
