Here’s a fun and indulgent recipe for Gooey Reese’s Cheesecake Cookies. These cookies are a delightful combination of soft cheesecake and chocolatey Reese’s peanut butter cups, making them a treat you won’t be able to resist!

Gooey Reese’s Cheesecake Cookies

Ingredients

For the Cookie Dough:
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup mini chocolate chips
For the Cheesecake Filling:
  • 8 oz cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 large egg yolk
  • 1 teaspoon vanilla extract
Additional Ingredients:
  • 10 Reese’s Peanut Butter Cups, chopped into small pieces

Instructions

  1. Preheat the Oven:
    • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. Prepare the Cookie Dough:
    • In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
    • Beat in the egg and vanilla extract until well combined.
    • In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the mini chocolate chips.
  3. Prepare the Cheesecake Filling:
    • In a medium bowl, beat the softened cream cheese with the granulated sugar, egg yolk, and vanilla extract until smooth and creamy.
  4. Assemble the Cookies:
    • Take a small amount of cookie dough (about 1 tablespoon) and roll it into a ball. Flatten it slightly and place a teaspoon of the cheesecake filling in the center. Top with a small amount of the chopped Reese’s Peanut Butter Cups. Seal the dough around the filling and roll it into a ball. Repeat with the remaining dough, cheesecake filling, and Reese’s pieces.
  5. Bake the Cookies:
    • Place the cookie balls on the prepared baking sheet, spacing them about 2 inches apart. Bake for 10-12 minutes, or until the edges are lightly golden. The centers should still look slightly undercooked—they will set as they cool.
  6. Cool and Serve:
    • Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
