Here’s a hearty and comforting recipe for Beef Pasta Soup. It’s a delicious, one-pot meal that’s perfect for chilly days, packed with beef, vegetables, and pasta in a rich, flavorful broth.

Beef Pasta Soup

Ingredients

  • 1 lb (450g) ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 3 medium carrots, diced
  • 2 celery stalks, diced
  • 1 (14.5 oz) can diced tomatoes, undrained
  • 6 cups beef broth
  • 1 cup water
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon dried thyme
  • Salt and black pepper, to taste
  • 2 cups small pasta (like ditalini, elbow macaroni, or shells)
  • 2 cups fresh spinach, chopped
  • 1/2 cup grated Parmesan cheese (optional, for garnish)

Instructions

  1. Brown the Beef:
    • In a large pot or Dutch oven, brown the ground beef over medium heat, breaking it up with a spoon as it cooks. Once browned, drain excess fat if necessary.
  2. Sauté the Vegetables:
    • Add the chopped onion, garlic, carrots, and celery to the pot. Cook for 5-7 minutes, stirring occasionally, until the vegetables are softened.
  3. Add the Tomatoes and Broth:
    • Stir in the diced tomatoes (with their juices), beef broth, water, dried oregano, dried basil, dried thyme, salt, and black pepper. Bring the mixture to a boil.
  4. Simmer the Soup:
    • Reduce the heat to medium-low and let the soup simmer for about 20 minutes, allowing the flavors to meld together.
  5. Cook the Pasta:
    • Add the pasta to the soup and cook for an additional 10-12 minutes, or until the pasta is tender. Stir occasionally to prevent sticking.
  6. Add the Spinach:
    • Stir in the chopped spinach and cook for 2-3 minutes, or until the spinach is wilted.
  7. Serve:
    • Ladle the soup into bowls and garnish with grated Parmesan cheese, if desired. Serve hot.
