Blood Sugar Stabilizing Soup

Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 1 medium zucchini, diced
  • 1 cup green beans, chopped
  • 1 cup mushrooms, sliced
  • 1 (14.5 oz) can diced tomatoes, undrained
  • 6 cups vegetable or chicken broth (low sodium)
  • 1 cup cooked quinoa or brown rice
  • 1 (15 oz) can chickpeas or white beans, drained and rinsed
  • 2 cups chopped kale or spinach
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and black pepper, to taste
  • 1 tablespoon apple cider vinegar (optional, for added flavor)

Instructions

  1. Sauté the Vegetables:
    • In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for 3-4 minutes, until translucent. Add the minced garlic and cook for an additional 1 minute, until fragrant.
  2. Add the Carrots and Celery:
    • Add the diced carrots and celery to the pot. Cook for 5-6 minutes, stirring occasionally, until the vegetables begin to soften.
  3. Add Remaining Vegetables:
    • Stir in the diced zucchini, green beans, and mushrooms. Cook for another 5 minutes, until the vegetables are slightly tender.
  4. Add Tomatoes and Broth:
    • Pour in the can of diced tomatoes (with juices) and the broth. Stir to combine.
  5. Add Grains and Beans:
    • Add the cooked quinoa or brown rice and the drained chickpeas or white beans. Stir well.
  6. Season the Soup:
    • Add the dried thyme, basil, oregano, salt, and black pepper. Bring the soup to a boil, then reduce the heat and let it simmer for 15-20 minutes.
  7. Add Greens:
    • Stir in the chopped kale or spinach and let the soup simmer for an additional 5 minutes, until the greens are wilted.
  8. Finish with Vinegar (Optional):
    • If desired, add a tablespoon of apple cider vinegar for a tangy flavor boost. Stir well.
  9. Serve:
    • Ladle the soup into bowls and serve hot. This soup can be enjoyed on its own or with a slice of whole grain bread.
