Tiramisu Pudding Cups

Here’s a delightful recipe for Tiramisu Pudding Cups. These individual servings are a creamy, coffee-flavored treat, perfect for any occasion.

Tiramisu Pudding Cups

Ingredients

  • For the Pudding:
    • 2 cups whole milk
    • 1/2 cup granulated sugar
    • 1/4 cup cornstarch
    • 1/4 teaspoon salt
    • 3 large egg yolks
    • 1 teaspoon vanilla extract
    • 1/2 cup mascarpone cheese
  • For the Coffee Mixture:
    • 1 cup strong brewed coffee or espresso, cooled
    • 2 tablespoons coffee liqueur (optional)
    • 1 tablespoon granulated sugar
  • For Assembly:
    • 24 ladyfinger cookies, broken into pieces
    • Unsweetened cocoa powder, for dusting
    • Shaved dark chocolate (optional, for garnish)
    • Fresh mint leaves (optional, for garnish)

Instructions

  1. Make the Pudding:
    • In a medium saucepan, whisk together the milk, sugar, cornstarch, and salt. Cook over medium heat, stirring constantly, until the mixture thickens and comes to a boil.
    • In a separate bowl, whisk the egg yolks. Gradually add a small amount of the hot milk mixture to the egg yolks, whisking constantly to temper the eggs.
    • Pour the egg mixture back into the saucepan and cook for another 2-3 minutes, until thickened. Remove from heat and stir in the vanilla extract.
    • Allow the pudding to cool slightly, then whisk in the mascarpone cheese until smooth. Cover with plastic wrap directly on the surface of the pudding to prevent a skin from forming. Chill in the refrigerator for at least 2 hours.
  2. Prepare the Coffee Mixture:
    • In a small bowl, combine the cooled coffee, coffee liqueur (if using), and sugar. Stir until the sugar is dissolved.
  3. Assemble the Pudding Cups:
    • Divide half of the ladyfinger pieces among 6 serving cups or glasses. Drizzle each with a tablespoon of the coffee mixture.
    • Spoon half of the chilled pudding over the ladyfingers in each cup. Repeat with another layer of ladyfingers, coffee mixture, and the remaining pudding.
  4. Chill and Serve:
    • Cover the cups with plastic wrap and chill in the refrigerator for at least 2 hours, or until set.
    • Before serving, dust the tops with cocoa powder and garnish with shaved dark chocolate and fresh mint leaves, if desired.
