Christmas style steak posole, and homemade tortillas

Here’s a festive recipe for Christmas Style Steak Pozole paired with Homemade Tortillas. This dish is hearty, comforting, and perfect for holiday gatherings.

Christmas Style Steak Pozole

Ingredients:

  • For the Pozole:
    • 1.5 lbs (680g) beef stew meat or chuck roast, cut into bite-sized pieces
    • 1 large onion, diced
    • 4 garlic cloves, minced
    • 8 cups beef broth or water
    • 1 (25 oz) can hominy, drained and rinsed
    • 2 tablespoons vegetable oil
    • 1 tablespoon ground cumin
    • 1 tablespoon ground oregano
    • 2 teaspoons ground coriander
    • 2 tablespoons chili powder (adjust for spice preference)
    • 1 bay leaf
    • Salt and pepper, to taste
  • For the Garnishes:
    • Radishes, thinly sliced
    • Shredded cabbage
    • Diced onions
    • Sliced avocado
    • Fresh cilantro
    • Lime wedges
    • Dried oregano
    • Crushed red pepper flakes

Instructions:

1. Brown the Beef:

  • Heat vegetable oil in a large pot or Dutch oven over medium-high heat. Add the beef and brown on all sides. Remove the beef from the pot and set aside.

2. Sauté the Aromatics:

  • In the same pot, add the diced onion and cook until softened, about 5 minutes. Add the minced garlic and cook for another minute until fragrant.

3. Build the Pozole:

  • Return the browned beef to the pot. Add the ground cumin, oregano, coriander, chili powder, and bay leaf. Stir to coat the beef with the spices.
  • Pour in the beef broth (or water) and bring to a boil. Reduce the heat to low, cover, and let it simmer for about 1.5 to 2 hours, or until the beef is tender.

4. Add the Hominy:

  • Stir in the drained hominy and continue to cook for another 30 minutes, allowing the flavors to meld together. Adjust the seasoning with salt and pepper to taste.

5. Serve:

  • Ladle the pozole into bowls and serve with your choice of garnishes. Squeeze fresh lime juice over the top for a bright finish.

Homemade Tortillas

Ingredients:

  • 2 cups masa harina (corn flour)
  • 1/2 teaspoon salt
  • 1.5 cups warm water

Instructions:

1. Make the Dough:

  • In a large bowl, combine the masa harina and salt. Gradually add the warm water, mixing with your hands until a soft dough forms. It should be smooth and not too sticky.

2. Shape the Tortillas:

  • Divide the dough into 12 equal portions and roll each into a ball. Cover with a damp cloth to keep the dough moist.
  • Using a tortilla press or a rolling pin, flatten each ball between two pieces of plastic wrap until it’s about 1/8 inch thick.

3. Cook the Tortillas:

  • Heat a dry skillet or griddle over medium-high heat. Carefully peel the tortilla off the plastic wrap and place it in the skillet.
  • Cook for about 1 minute on each side, or until lightly browned and slightly puffed. Keep the cooked tortillas warm by wrapping them in a clean towel.

4. Serve:

  • Serve the fresh tortillas alongside the Christmas Style Steak Pozole. They’re perfect for dipping or scooping up the flavorful broth and tender beef.

Tips:

  • Make-Ahead: The pozole can be made a day in advance; the flavors will only get better. Reheat gently before serving.
  • Hominy: If you can find fresh hominy, it’s even better, but canned works perfectly for convenience.
  • Tortilla Variations: You can add a bit of chopped herbs or cheese to the tortilla dough for added flavor.
