Cream Cheese Muffins Topped with Smoked Salmon

Ingredients:

  • For the Muffins:
    • 1 1/2 cups all-purpose flour
    • 1/2 cup granulated sugar
    • 1/2 teaspoon baking powder
    • 1/4 teaspoon baking soda
    • 1/4 teaspoon salt
    • 1/2 cup unsalted butter, softened
    • 1/2 cup cream cheese, softened
    • 2 large eggs
    • 1/2 cup sour cream or Greek yogurt
    • 1 teaspoon vanilla extract
  • For the Topping:
    • 4 oz (115g) smoked salmon, thinly sliced or chopped
    • 2 tablespoons chopped fresh chives or dill
    • 1 tablespoon capers (optional)
    • Lemon zest, for garnish (optional)

Instructions:

1. Preheat Oven:

  • Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or lightly grease the cups.

2. Prepare the Muffin Batter:

  • In a medium bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  • In a large mixing bowl, cream together the softened butter and cream cheese until smooth and fluffy.
  • Add the eggs, one at a time, beating well after each addition.
  • Mix in the sour cream (or Greek yogurt) and vanilla extract.
  • Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Be careful not to overmix.

3. Fill the Muffin Tin:

  • Divide the batter evenly among the muffin cups, filling each about 2/3 full.

4. Bake the Muffins:

  • Bake in the preheated oven for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean and the tops are lightly golden.
  • Let the muffins cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.

5. Prepare the Topping:

  • Once the muffins have cooled, top each with a slice or pieces of smoked salmon.
  • Sprinkle with chopped fresh chives or dill and capers, if using. Add a bit of lemon zest for extra flavor, if desired.

Serving Suggestions:

  • These muffins make a great brunch item or a light lunch option.
  • Serve with a side salad or some fresh fruit for a well-rounded meal.

Tips:

  • Cream Cheese: Ensure that the cream cheese and butter are well-softened for a smooth batter.
  • Smoked Salmon: You can use pre-sliced smoked salmon or chop it into smaller pieces for easier topping.

These Cream Cheese Muffins Topped with Smoked Salmon offer a delightful blend of rich, creamy flavors with the savory taste of smoked salmon, perfect for a special breakfast or brunch!
