Posted on August 30, 2024
Here’s a classic recipe for Amish Country Casserole, a hearty and comforting dish that’s perfect for a family meal. This casserole combines ground beef, vegetables, and a creamy sauce, all baked together for a deliciously satisfying dish.

Amish Country Casserole

Ingredients:

  • 1 pound ground beef
  • 1 medium onion, diced
  • 1 bell pepper, diced (any color)
  • 2 cloves garlic, minced
  • 1 can (15 oz) diced tomatoes, undrained
  • 1 can (15 oz) corn, drained
  • 1 can (15 oz) green beans, drained
  • 1 cup uncooked elbow macaroni or small pasta
  • 1 cup shredded cheddar cheese
  • 1 can (10.5 oz) cream of mushroom soup (or cream of chicken soup)
  • 1/2 cup milk
  • 1 teaspoon dried oregano
  • 1/2 teaspoon paprika
  • Salt and pepper, to taste
  • Optional: 1/2 cup grated Parmesan cheese for topping

Instructions:

1. Preheat the Oven:

  • Preheat your oven to 350°F (175°C).

2. Cook the Ground Beef:

  • In a large skillet, cook the ground beef over medium heat until browned and fully cooked. Drain excess fat if necessary.
  • Add the diced onion, bell pepper, and garlic. Cook until the vegetables are tender, about 5 minutes.

3. Add Vegetables and Pasta:

  • Stir in the diced tomatoes (with their juice), corn, green beans, and uncooked pasta. Mix well.
  • Add the cream of mushroom soup, milk, dried oregano, paprika, salt, and pepper. Stir to combine all the ingredients.

4. Transfer to Casserole Dish:

  • Pour the mixture into a greased 9×13-inch baking dish. Spread it out evenly.
  • Sprinkle the shredded cheddar cheese over the top. If using, also sprinkle with grated Parmesan cheese.

5. Bake:

  • Bake in the preheated oven for 25-30 minutes, or until the casserole is hot and bubbly and the cheese is melted and slightly golden.

6. Serve:

  • Let the casserole cool for a few minutes before serving.

Tips:

  • Variations: Feel free to customize the casserole with other vegetables like peas or carrots. You can also use different types of cheese or add cooked bacon for extra flavor.
  • Pasta: If you prefer, you can use cooked pasta instead of uncooked; just reduce the baking time slightly.
  • Cream of Soup: You can use other varieties of cream soup, such as cream of chicken or cream of celery, depending on your preference.

This Amish Country Casserole is a great comfort food that brings together simple ingredients for a delicious and filling meal. Enjoy!
