Here’s a quick and delicious recipe for an Italian Cream Cake that’s perfect when you’re short on time but still want to enjoy a rich and flavorful dessert.

Quick Italian Cream Cake Recipe

Ingredients:

For the Cake:

  • 1 box white or yellow cake mix (15.25 oz)
  • 1 cup buttermilk
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup sweetened shredded coconut
  • 1/2 cup chopped pecans

For the Frosting:

  • 8 oz cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 3 cups powdered sugar
  • 1 tsp vanilla extract
  • 1/2 cup sweetened shredded coconut (optional, for topping)
  • 1/4 cup chopped pecans (optional, for topping)

Instructions:

1. Prepare the Cake:

  • Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  • In a large mixing bowl, combine the cake mix, buttermilk, vegetable oil, eggs, and vanilla extract. Beat with an electric mixer on medium speed until smooth and well combined.
  • Fold in the shredded coconut and chopped pecans.
  • Divide the batter evenly between the prepared cake pans.

2. Bake:

  • Bake the cakes in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the cakes to cool in the pans for 10 minutes, then remove from the pans and transfer to a wire rack to cool completely.

3. Make the Frosting:

  • In a large bowl, beat the softened cream cheese and butter together until creamy and smooth.
  • Gradually add the powdered sugar, one cup at a time, beating on low speed until fully incorporated.
  • Stir in the vanilla extract.

4. Assemble the Cake:

  • Place one cake layer on a serving plate and spread a thick layer of frosting on top.
  • Place the second cake layer on top and frost the entire cake with the remaining frosting.
  • If desired, sprinkle additional shredded coconut and chopped pecans on top for decoration.

5. Serve:

  • Slice and enjoy your quick and easy Italian Cream Cake!

Tips:

  • Make Ahead: The cake can be made a day in advance and stored in the refrigerator. Let it come to room temperature before serving.
  • Additions: You can add a bit of almond extract for an extra flavor dimension.
  • Decoration: For a more traditional look, you can press some of the chopped pecans and coconut onto the sides of the frosted cake.
