Bacon-Wrapped Jalapeño Popper Stuffed Chicken Recipe

Ingredients:

For the Stuffing:

  • 4 oz cream cheese, softened
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup shredded mozzarella cheese
  • 2-3 jalapeños, seeded and finely chopped (adjust to taste)
  • 1/4 cup cooked and crumbled bacon (plus extra for wrapping)
  • 1 clove garlic, minced
  • Salt and pepper to taste

For the Chicken:

  • 4 boneless, skinless chicken breasts
  • 8-12 slices of bacon
  • 1 tbsp olive oil
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and pepper to taste

Instructions:

1. Prepare the Stuffing:

  • In a bowl, combine the cream cheese, shredded cheddar cheese, shredded mozzarella cheese, chopped jalapeños, crumbled bacon, minced garlic, salt, and pepper. Mix until well combined.

2. Prepare the Chicken:

  • Preheat your oven to 375°F (190°C).
  • Place each chicken breast between two sheets of plastic wrap or parchment paper. Gently pound them to an even thickness using a meat mallet or rolling pin (about 1/2 inch thick).

3. Stuff the Chicken:

  • Spread an equal amount of the jalapeño popper stuffing onto one side of each chicken breast.
  • Fold the chicken breast over the stuffing and secure it with toothpicks if needed.

4. Wrap with Bacon:

  • Season the outside of each stuffed chicken breast with paprika, garlic powder, onion powder, salt, and pepper.
  • Wrap each chicken breast with 2-3 slices of bacon, securing the ends with toothpicks if necessary.

5. Cook the Chicken:

  • Heat olive oil in a large ovenproof skillet over medium-high heat.
  • Add the bacon-wrapped chicken breasts and sear for about 3-4 minutes on each side until the bacon is crispy and the chicken is golden brown.
  • Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).

6. Serve:

  • Remove the chicken from the oven and let it rest for a few minutes before removing the toothpicks.
