Gourmet Stuffed Skirt Steak with Savory Herb and Cheese Filling is a delicious dish where tender skirt steak is rolled around a flavorful filling of herbs and cheeses, then seared and roasted to perfection. Here’s how to make it:

Ingredients:

  • 1 ½ to 2 lbs skirt steak (butterflied and pounded thin)
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • Kitchen twine (for tying the rolls)

For the Filling:

  • 4 oz cream cheese (softened)
  • ½ cup shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese
  • 1 cup fresh spinach (chopped)
  • 3 cloves garlic (minced)
  • 2 tbsp fresh parsley (chopped)
  • 1 tbsp fresh rosemary (chopped)
  • 1 tbsp fresh thyme (chopped)
  • 1 tsp lemon zest
  • Salt and pepper to taste

Instructions:

Step 1: Prepare the Filling

  1. In a medium bowl, combine the cream cheese, mozzarella, and Parmesan. Mix until smooth.
  2. Stir in the chopped spinach, garlic, parsley, rosemary, thyme, and lemon zest. Season with salt and pepper. Mix until well combined and set aside.

Step 2: Prepare the Skirt Steak

  1. If your skirt steak is thick, you may need to butterfly it by slicing it in half horizontally (without cutting all the way through) and opening it like a book. Use a meat mallet to pound it to an even thickness of about ¼ to ½ inch.
  2. Season the steak with salt and pepper on both sides.

Step 3: Stuff the Steak

  1. Spread the herb and cheese filling evenly over the steak, leaving about an inch of space around the edges.
  2. Carefully roll the steak up tightly, starting from one long side and rolling towards the other, making sure the filling stays inside.
  3. Tie the roll with kitchen twine at 1-2 inch intervals to keep it secure during cooking.

Step 4: Sear the Steak

  1. Preheat your oven to 375°F (190°C).
  2. In a large oven-safe skillet, heat 1 tablespoon of olive oil over medium-high heat.
  3. Sear the stuffed steak roll for 2-3 minutes on each side until it develops a nice golden-brown crust.

Step 5: Roast the Steak

  1. Transfer the skillet to the preheated oven and roast the steak for 15-20 minutes, or until it reaches your desired level of doneness (internal temperature of 135°F for medium-rare).
  2. Remove the steak from the oven and let it rest for 5-10 minutes before slicing.

Step 6: Serve

  1. Remove the kitchen twine and slice the steak into 1-inch thick rounds.
  2. Serve the stuffed skirt steak with a side of your choice, like roasted vegetables, mashed potatoes, or a fresh salad.

Tips:

  • You can add sun-dried tomatoes or mushrooms to the filling for extra flavor.
  • For a smoky finish, you can grill the steak over medium-high heat after searing it instead of roasting in the oven.
