Madarin Orange Salad

Here’s a refreshing Mandarin Orange Salad recipe, perfect for any occasion. It’s light, sweet, and has a delightful citrus flavor!

Ingredients:

  • 1 can (15 oz) mandarin oranges (drained)
  • 4 cups mixed greens (spinach, arugula, or romaine lettuce)
  • ½ cup sliced almonds (toasted)
  • ¼ cup dried cranberries or raisins
  • ½ cup feta cheese (crumbled)
  • 1 small red onion, thinly sliced (optional)

Dressing:

  • ¼ cup olive oil
  • 2 tbsp white wine vinegar or apple cider vinegar
  • 1 tbsp honey
  • 1 tsp Dijon mustard
  • Salt and pepper to taste

Instructions:

Step 1: Prepare the Salad

  1. In a large bowl, combine the mixed greens, mandarin oranges, toasted almonds, dried cranberries, and feta cheese.
  2. If using, add the thinly sliced red onion.

Step 2: Make the Dressing

  1. In a small bowl, whisk together the olive oil, vinegar, honey, and Dijon mustard until well combined.
  2. Season with salt and pepper to taste.

Step 3: Assemble the Salad

  1. Drizzle the dressing over the salad just before serving.
  2. Toss gently to combine all the ingredients.

Optional Additions:

  • Add grilled chicken or shrimp for extra protein.
  • Substitute the feta with goat cheese or blue cheese for a different flavor profile.
  • You can also add avocado slices for creaminess.

This Mandarin Orange Salad is perfect for a light lunch or as a side dish for dinner. The sweetness of the oranges pairs beautifully with the tangy dressing and crunchy almonds!
