Eggnog cake

Here’s a festive and flavorful Eggnog Cake recipe, perfect for holiday gatherings or whenever you’re in the mood for a delicious seasonal treat!

Ingredients:

For the Cake:

  • 2 ½ cups all-purpose flour
  • 2 ½ tsp baking powder
  • ½ tsp salt
  • 1 tsp ground nutmeg
  • ½ tsp ground cinnamon
  • 1 cup unsalted butter (room temperature)
  • 1 ½ cups granulated sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1 cup eggnog (store-bought or homemade)
  • ½ cup milk

For the Frosting:

  • 1 cup unsalted butter (room temperature)
  • 4 cups powdered sugar
  • ¼ cup eggnog
  • ½ tsp vanilla extract
  • ¼ tsp ground nutmeg (for garnish)

Instructions:

Step 1: Preheat the Oven

  1. Preheat your oven to 350°F (175°C).
  2. Grease and flour two 9-inch round cake pans or line with parchment paper.

Step 2: Prepare the Dry Ingredients

  1. In a medium bowl, whisk together the flour, baking powder, salt, nutmeg, and cinnamon.

Step 3: Mix the Wet Ingredients

  1. In a large bowl, cream together the butter and sugar until light and fluffy (about 3-4 minutes).
  2. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.

Step 4: Combine Wet and Dry Ingredients

  1. Gradually add the dry ingredients to the wet mixture, alternating with the eggnog and milk. Begin and end with the dry ingredients, mixing until just combined.

Step 5: Bake the Cake

  1. Divide the batter evenly between the prepared cake pans.
  2. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  3. Remove from the oven and let the cakes cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.

Step 6: Prepare the Frosting

  1. In a large bowl, beat the butter until smooth and creamy.
  2. Gradually add the powdered sugar, about 1 cup at a time, alternating with the eggnog.
  3. Stir in the vanilla extract and beat until light and fluffy.

Step 7: Assemble the Cake

  1. Once the cakes have cooled, spread a layer of frosting over the top of one of the cakes.
  2. Place the second cake on top and frost the top and sides of the entire cake.
  3. Garnish with a sprinkle of ground nutmeg on top for a festive finish.

Optional Additions:

  • You can drizzle the cake with a rum glaze for an extra kick.
  • Add a sprinkle of cinnamon sugar between the layers for extra warmth and sweetness.

Serve:

  • Slice and serve this Eggnog Cake with a glass of cold eggnog or a cup of coffee!
