Here’s a simple and flavorful Garlic Lemon Shrimp Skewers recipe that you can enjoy, whether you’re grilling outdoors or using an indoor grill!

Ingredients:

  • 1 lb large shrimp, peeled and deveined
  • 3 tbsp olive oil
  • 3 tbsp lemon juice (freshly squeezed)
  • 4 cloves garlic, minced
  • 1 tsp lemon zest
  • 1 tsp dried oregano
  • ½ tsp paprika
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)
  • Lemon wedges (for serving)

Instructions:

Step 1: Marinate the Shrimp

  1. In a bowl, whisk together olive oil, lemon juice, garlic, lemon zest, oregano, paprika, salt, and pepper.
  2. Add the shrimp to the bowl and toss to coat. Let the shrimp marinate for at least 15-20 minutes (but no longer than 30 minutes, as the lemon juice can start to cook the shrimp).

Step 2: Prepare the Skewers

  1. If you’re using wooden skewers, soak them in water for at least 30 minutes to prevent burning on the grill.
  2. Thread the shrimp onto the skewers, making sure they are secure but not too tightly packed.

Step 3: Grill the Shrimp

  1. Preheat the grill (or grill pan) to medium-high heat.
  2. Grill the shrimp skewers for 2-3 minutes per side, or until the shrimp are opaque and cooked through.
  3. Be careful not to overcook, as shrimp can become tough.

Step 4: Serve

  1. Remove the shrimp from the grill and garnish with fresh parsley and a squeeze of lemon juice.
  2. Serve with extra lemon wedges on the side.

Suggested Sides:

  • Grilled vegetables (like zucchini, bell peppers, or asparagus)
  • Rice pilaf or couscous
  • Garlic bread or a light salad

Tips:

  • For extra flavor, sprinkle some red pepper flakes into the marinade if you like a bit of heat.
  • You can also substitute lime juice for the lemon for a slightly different citrus flavor.
