Here’s a delicious Smothered Pork Chops recipe, where tender pork chops are cooked in a rich, flavorful gravy made from onions, garlic, and a touch of seasoning. This Southern comfort food is perfect for a hearty meal!

Ingredients:

For the Pork Chops:

  • 4 bone-in pork chops (about 1 inch thick)
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper, to taste
  • ½ cup all-purpose flour
  • 2 tbsp olive oil or vegetable oil

For the Gravy:

  • 1 large onion, thinly sliced
  • 2 cloves garlic, minced
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 2 cups chicken broth
  • ½ cup heavy cream (optional for extra creaminess)
  • 1 tsp Worcestershire sauce
  • ½ tsp thyme (dried or fresh)
  • Salt and pepper, to taste

Instructions:

Step 1: Season and Sear the Pork Chops

  1. In a small bowl, combine paprika, garlic powder, onion powder, salt, and pepper. Sprinkle the mixture on both sides of the pork chops.
  2. Dredge the pork chops lightly in flour, shaking off any excess.
  3. Heat the oil in a large skillet over medium heat. Add the pork chops and cook for 3-4 minutes per side until they are nicely browned. Remove the pork chops and set aside.

Step 2: Make the Gravy

  1. In the same skillet, add the butter and onions. Cook over medium heat until the onions are soft and caramelized, about 8-10 minutes.
  2. Add the garlic and cook for an additional minute.
  3. Stir in the flour and cook for 1-2 minutes to form a roux.
  4. Gradually whisk in the chicken broth and Worcestershire sauce, scraping up any browned bits from the bottom of the pan.
  5. Add the thyme and season with salt and pepper to taste.
  6. Stir in the heavy cream if using, and bring the gravy to a simmer. Let it cook for about 5 minutes until it thickens.

Step 3: Smother the Pork Chops

  1. Return the seared pork chops to the skillet, nestling them into the gravy.
  2. Reduce the heat to low, cover, and simmer for 25-30 minutes, or until the pork chops are tender and fully cooked.

Step 4: Serve

  1. Serve the smothered pork chops with the gravy poured over the top.
  2. Pair with mashed potatoes, rice, or your favorite veggies.

Tips:

  • For extra flavor, you can add a splash of white wine or apple cider vinegar to the gravy.
  • If you want even more depth, add a few slices of mushrooms to the onions while they cook.
