Here’s a delightful recipe for Light & Fluffy Easy Sponge Delight! This sponge cake is perfect as a base for desserts, layered with cream and fruit, or enjoyed on its own.

Ingredients:

  • For the Sponge Cake:
    • 4 large eggs, at room temperature
    • 1 cup granulated sugar
    • 1 cup all-purpose flour
    • 1 tsp baking powder
    • 1/4 tsp salt
    • 1/4 cup unsalted butter, melted
    • 1 tsp vanilla extract
  • For the Whipped Cream:
    • 1 cup heavy whipping cream
    • 2 tbsp powdered sugar
    • 1 tsp vanilla extract
  • Optional Toppings:
    • Fresh fruit (strawberries, raspberries, blueberries, etc.)
    • Chocolate shavings or dusting of cocoa powder

Instructions:

Make the Sponge Cake:

  1. Preheat the oven to 350°F (175°C). Grease and flour an 8-inch round cake pan or line it with parchment paper.
  2. Whisk eggs and sugar: In a large mixing bowl, beat the eggs and granulated sugar together using an electric mixer on high speed for about 5-7 minutes, until the mixture is thick, pale, and tripled in volume.
  3. Combine dry ingredients: In a separate bowl, whisk together the flour, baking powder, and salt.
  4. Fold in dry ingredients: Gently fold the flour mixture into the egg mixture, being careful not to deflate the batter.
  5. Add melted butter and vanilla: Drizzle the melted butter and add the vanilla extract, folding gently until just combined.
  6. Bake: Pour the batter into the prepared cake pan and smooth the top. Bake for 25-30 minutes, or until the cake is golden brown and a toothpick inserted into the center comes out clean.
  7. Cool: Remove from the oven and let the cake cool in the pan for 10 minutes. Then, turn it out onto a wire rack to cool completely.

Make the Whipped Cream:

  1. Whip the cream: In a mixing bowl, combine the heavy whipping cream, powdered sugar, and vanilla extract. Using an electric mixer, whip until soft peaks form.

Assemble the Dessert:

  1. Slice the sponge cake: Once the sponge cake is completely cool, slice it in half horizontally if desired for layers.
  2. Layer with whipped cream: Spread a generous layer of whipped cream on the bottom layer of the sponge cake, then top with fresh fruit.
  3. Top with the second layer: Place the top layer of the sponge cake on top and add more whipped cream and fruit on top if desired.
  4. Serve: Slice and serve immediately or refrigerate for up to 2 hours before serving.
