GLAZED LAMB CHOPS WITH MASHED POTATOES

Here’s a delicious recipe for Glazed Lamb Chops with Mashed Potatoes. The lamb chops are perfectly seared and glazed with a sweet and savory sauce, paired with creamy mashed potatoes.

Glazed Lamb Chops:

Ingredients:

  • 8 small lamb chops (about 1-inch thick)
  • 2 tbsp olive oil
  • 2 tbsp balsamic vinegar
  • 2 tbsp honey or maple syrup
  • 3 cloves garlic, minced
  • 1 tsp fresh rosemary or thyme (optional)
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Season the lamb: Pat the lamb chops dry with paper towels and season both sides generously with salt and pepper.
  2. Sear the lamb: Heat olive oil in a large skillet over medium-high heat. Once hot, add the lamb chops and sear for 3-4 minutes per side, until browned and cooked to your desired doneness (medium-rare is about 145°F/63°C).
  3. Make the glaze: In a small bowl, mix the balsamic vinegar, honey, and minced garlic. Reduce the heat to medium and pour the glaze into the skillet with the lamb chops.
  4. Glaze the lamb: Cook the lamb chops in the glaze for 2-3 minutes, turning them over to coat them in the sauce until it thickens slightly.
  5. Garnish: Remove from heat and sprinkle with fresh parsley before serving.

Mashed Potatoes:

Ingredients:

  • 2 lbs potatoes (Yukon Gold or Russet)
  • 1/2 cup heavy cream or milk
  • 4 tbsp butter
  • Salt and pepper, to taste
  • Optional: 2 tbsp sour cream or cream cheese for extra creaminess

Instructions:

  1. Boil the potatoes: Peel and cut the potatoes into chunks. Place them in a large pot and cover with cold water. Add a pinch of salt, and bring to a boil. Cook for 15-20 minutes, or until the potatoes are fork-tender.
  2. Mash the potatoes: Drain the potatoes and return them to the pot. Add the butter and heavy cream (or milk). Mash until smooth, and season with salt and pepper to taste. For extra richness, stir in sour cream or cream cheese if desired.

Serving:

Plate the glazed lamb chops alongside a generous portion of creamy mashed potatoes. Drizzle any remaining glaze over the lamb chops for extra flavor, and garnish with fresh parsley.
