Country Fried Pork Chops with Rich Gravy is a hearty, comforting Southern dish. The pork chops are breaded and fried to golden perfection, then served with a rich, creamy gravy made from the pan drippings. Here’s how to make it:

Country Fried Pork Chops with Rich Gravy Recipe

Ingredients:

For the pork chops:

  • 4 bone-in pork chops (about 1/2 inch thick)
  • 1 cup all-purpose flour
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • 1/2 tsp cayenne pepper (optional, for heat)
  • Salt and black pepper, to taste
  • 2 large eggs
  • 1/4 cup milk
  • 1/2 cup vegetable oil (for frying)

For the rich gravy:

  • 1/4 cup all-purpose flour
  • 2 cups whole milk (or half-and-half for a richer gravy)
  • 1 cup chicken or beef broth (optional for extra flavor)
  • Salt and black pepper, to taste

Instructions:

  1. Prepare the pork chops:
    • Pat the pork chops dry with paper towels and season both sides with salt and pepper.
  2. Make the dredging mixture:
    • In a shallow dish, combine 1 cup of flour, garlic powder, onion powder, paprika, cayenne (if using), and a pinch of salt and pepper.
    • In another shallow bowl, whisk together the eggs and 1/4 cup milk.
  3. Bread the pork chops:
    • Dredge each pork chop in the flour mixture, then dip into the egg mixture, making sure it’s fully coated.
    • Dredge it again in the flour mixture, pressing the flour into the pork chops to ensure a good coating.
  4. Fry the pork chops:
    • In a large skillet, heat the vegetable oil over medium heat.
    • Once the oil is hot (but not smoking), carefully place the pork chops in the pan. Fry for 4-5 minutes per side, until golden brown and crispy.
    • Remove the pork chops from the skillet and set them on a plate lined with paper towels to drain.
  5. Make the gravy:
    • Pour off excess oil from the skillet, leaving about 2 tablespoons of the drippings and any crispy bits.
    • Whisk in the 1/4 cup of flour and cook for 1-2 minutes to create a roux, stirring constantly.
    • Gradually whisk in the milk (and broth if using), ensuring the mixture is smooth. Cook for 5-7 minutes, stirring frequently, until the gravy thickens.
    • Season with salt and pepper to taste.
  6. Serve:
    • Pour the rich gravy over the fried pork chops, or serve it on the side for dipping.
    • Pair with mashed potatoes, green beans, or biscuits for a complete Southern-style meal.
