Chicken a la King

Here’s a classic recipe for Chicken a la King, a creamy and flavorful dish that’s perfect over rice, noodles, or toast!

Chicken a la King Recipe

Ingredients

  • 2 cups cooked chicken, diced (rotisserie or poached)
  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 1 bell pepper (red or green), chopped
  • 1 cup mushrooms, sliced
  • 2 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 1 cup chicken broth
  • 1 cup heavy cream (or milk for a lighter version)
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon Dijon mustard (optional)
  • Salt and pepper, to taste
  • 1/2 cup frozen peas (optional)
  • Chopped fresh parsley, for garnish

Instructions

1. Sauté the Vegetables:

  • In a large skillet, heat the olive oil over medium heat. Add the onion and bell pepper, cooking until softened, about 3-4 minutes.
  • Stir in the mushrooms and garlic, cooking for an additional 2-3 minutes until the mushrooms are tender.

2. Make the Sauce:

  • Sprinkle the flour over the cooked vegetables and stir well to coat. Cook for 1-2 minutes to eliminate the raw flour taste.
  • Gradually whisk in the chicken broth, followed by the heavy cream. Bring the mixture to a gentle simmer, stirring constantly until it thickens, about 5 minutes.

3. Add Chicken and Seasoning:

  • Stir in the diced chicken, Worcestershire sauce, Dijon mustard (if using), and frozen peas. Season with salt and pepper to taste. Let it simmer for another 5 minutes to heat through.

4. Serve:

  • Serve the Chicken a la King over cooked rice, egg noodles, or toast. Garnish with chopped parsley for a fresh touch.
