Here’s a delightful recipe for Lemon Blossoms, which are soft, sweet lemon cookies that are sure to brighten your day!

Ingredients:

  • For the Cookies:
    • 1/2 cup unsalted butter, softened
    • 1 cup granulated sugar
    • 1 large egg
    • Zest of 1 lemon
    • 2 tablespoons lemon juice
    • 1 1/2 cups all-purpose flour
    • 1 teaspoon baking powder
    • 1/4 teaspoon salt
  • For the Coating:
    • 1/4 cup granulated sugar
    • 1 tablespoon lemon zest (optional)

Instructions:

  1. Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Mix Wet Ingredients: In a large bowl, cream together the softened butter and sugar until light and fluffy. Beat in the egg, lemon zest, and lemon juice until well combined.
  3. Combine Dry Ingredients: In another bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  4. Form the Cookies: Scoop tablespoon-sized portions of dough and roll them into balls. Place them on the prepared baking sheet, spacing them about 2 inches apart.
  5. Bake: Bake for 10-12 minutes, or until the edges are lightly golden. The centers might look slightly underbaked, but they will firm up as they cool.
  6. Coat with Sugar: While the cookies are baking, mix the granulated sugar and lemon zest (if using) in a shallow bowl. Once the cookies are out of the oven, let them cool for a few minutes, then roll them in the lemon-sugar mixture while still warm.
  7. Cool Completely: Allow the cookies to cool completely on a wire rack.

Tips:

  • For an extra burst of lemon flavor, you can add a bit more lemon zest or juice.
  • These cookies can be stored in an airtight container for up to a week.
