Here’s a delightful recipe for Banana Foster Pudding, a creamy and indulgent dessert inspired by the classic banana foster!

Ingredients:

For the Pudding:

  • 2 ripe bananas, sliced
  • 1/2 cup brown sugar
  • 1/4 cup unsalted butter
  • 1/4 cup rum (optional, or use a bit of vanilla extract)
  • 2 cups whole milk
  • 1/2 cup granulated sugar
  • 1/3 cup cornstarch
  • 1/4 teaspoon salt
  • 3 large egg yolks
  • 1 teaspoon vanilla extract

For the Whipped Cream:

  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract

For Assembly:

  • Vanilla wafers or graham crackers (optional)
  • Additional sliced bananas for garnish

Instructions:

  1. Make the Banana Foster Sauce:
    • In a skillet over medium heat, melt the butter and add the brown sugar. Stir until it’s smooth and bubbly.
    • Add the sliced bananas and cook for 2-3 minutes, gently stirring to coat the bananas in the sauce.
    • If using rum, carefully add it to the skillet and cook for another minute, allowing the alcohol to cook off. Remove from heat and set aside.
  2. Prepare the Pudding:
    • In a medium saucepan, whisk together the milk, granulated sugar, cornstarch, and salt. Cook over medium heat, stirring constantly until the mixture thickens and starts to bubble.
    • In a small bowl, whisk the egg yolks. Gradually add a little of the hot milk mixture to the yolks to temper them, then whisk the yolk mixture back into the saucepan.
    • Cook for an additional 2-3 minutes, stirring continuously, until thickened. Remove from heat and stir in the vanilla extract.
  3. Combine the Mixtures:
    • In a large bowl, layer the pudding, followed by the banana foster sauce, and then more pudding. If desired, you can layer in some vanilla wafers or graham crackers for added texture.
  4. Make the Whipped Cream:
    • In a separate bowl, whip the heavy cream with powdered sugar and vanilla extract until soft peaks form.
  5. Serve:
    • Top the pudding with whipped cream and garnish with additional sliced bananas. Serve immediately or refrigerate until ready to serve.

Tips:

  • For a non-alcoholic version, simply skip the rum and use extra vanilla extract.
  • This pudding can be prepared a day in advance for even better flavor.
