Sweet Corn Pudding

Ingredients:

  • 2 cans (15 oz each) creamed corn (or about 3 cups if using fresh or frozen corn)
  • 1 can (15 oz) whole kernel corn, drained
  • 2 large eggs
  • 1/2 cup (120ml) milk (whole milk or half-and-half for extra richness)
  • 1/4 cup (60g) unsalted butter, melted
  • 1/4 cup (50g) granulated sugar
  • 1 teaspoon vanilla extract (optional, for added sweetness)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup (60g) all-purpose flour (for thickening)
  • 1 teaspoon baking powder

Instructions:

  1. Preheat your oven: Preheat your oven to 350°F (175°C). Grease a 9×9-inch baking dish or a similar-sized casserole dish.
  2. Prepare the corn mixture: In a large bowl, combine the creamed corn, whole kernel corn, eggs, milk, melted butter, sugar, vanilla extract (if using), salt, and pepper. Stir until well combined.
  3. Add dry ingredients: In a separate bowl, whisk together the flour and baking powder. Add this to the wet corn mixture and stir until everything is evenly incorporated. The flour will help thicken the pudding as it bakes, giving it that creamy, custard-like consistency.
  4. Bake the pudding: Pour the corn mixture into the prepared baking dish and spread it out evenly. Bake in the preheated oven for 45-50 minutes, or until the top is golden brown and the pudding is set in the center (a toothpick inserted should come out clean).   • Texture Variation: If you prefer a smoother pudding, you can blend the whole kernel corn with the creamed corn for a more uniform texture.
