Hash Brown Chicken Casserole is a creamy, comforting dish that combines tender chicken, crispy hash browns, and a rich, cheesy sauce. It’s a great make-ahead meal and perfect for feeding a crowd. Here’s an easy recipe you can try!

Ingredients:

  • 2 cups cooked chicken, shredded (about 2 chicken breasts or thighs)
  • 1 (30 oz) bag frozen hash browns (either shredded or cubed)
  • 1 can (10.5 oz) cream of chicken soup (or use cream of mushroom for a variation)
  • 1/2 cup sour cream
  • 2 cups shredded cheddar cheese (or a mix of cheddar and mozzarella)
  • 1/2 cup milk (optional, for creamier texture)
  • 1/2 teaspoon garlic powder (optional, for flavor)
  • 1/2 teaspoon onion powder (optional, for flavor)
  • Salt and pepper, to taste
  • 1 tablespoon butter (for greasing the baking dish)
  • 1/4 cup grated Parmesan cheese (optional, for topping)

Instructions:

  1. Preheat the oven: Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish with butter or cooking spray.
  2. Prepare the casserole mixture: In a large bowl, combine the shredded chicken, frozen hash browns (no need to thaw), cream of chicken soup, sour cream, garlic powder, onion powder, and milk (if using). Mix well. Season with salt and pepper to taste.
  3. Assemble the casserole: Pour the mixture into the prepared baking dish and spread it out evenly.
  4. Add cheese: Sprinkle the shredded cheddar cheese evenly over the top of the casserole. If you’re using Parmesan cheese, sprinkle it on top for extra flavor and a nice golden crust.
  5. Bake: Bake the casserole in the preheated oven for 45-55 minutes, or until the top is golden brown and the casserole is bubbly around the edges. You can cover it with foil during the first 30 minutes to prevent it from over-browning, and then uncover it for the last 15-20 minutes to allow the cheese to melt and turn golden.
  6. Serve: Let the casserole rest for about 5 minutes before serving. You can garnish with extra chopped green onions or parsley for a pop of color, if desired.

  • Add vegetables: Feel free to add veggies like frozen peas, chopped spinach, or diced bell peppers to the casserole for extra nutrition and flavor.
  • Make ahead: You can assemble the casserole ahead of time and store it in the fridge for up to a day before baking. Just let it sit at room temperature for about 20 minutes before baking.
  • Leftovers: This casserole makes great leftovers and reheats well in the microwave or oven.
