Ingredients:

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 4 packages (32 ounces) cream cheese, softened
  • 1 1/4 cups granulated sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 2/3 cup sour cream
  • 2/3 cup heavy cream

Instructions:

  1. Preheat the Oven: Preheat your oven to 325°F (163°C).
  2. Prepare the Crust: Mix the graham cracker crumbs with melted butter. Press the mixture into the bottom of a 9-inch springform pan. Bake the crust for about 10 minutes, then let it cool.
  3. Prepare the Filling: In a large bowl, beat the cream cheese until smooth. Add sugar and vanilla extract, and continue beating until well combined.
  4. Add Eggs: Add the eggs one at a time, beating well after each addition.
  5. Incorporate Sour Cream and Heavy Cream: Add the sour cream and heavy cream to the cream cheese mixture, and beat until smooth and creamy.
  6. Pour into the Crust: Pour the cream cheese mixture over the cooled crust in the springform pan.
  7. Bake: Bake in the preheated oven for about 1 hour or until the center is set and the top is lightly browned.
  8. Cooling: Allow the cake to cool in the oven with the door ajar for about an hour, then transfer it to the refrigerator to chill for at least 4 hours or overnight.
  9. Serve: Once chilled, remove the cake from the springform pan, slice, and serve.
