Chicken Alfredo Lasagna Roll-Ups

Chicken Alfredo Lasagna Roll-Ups are a creamy, cheesy twist on traditional lasagna, featuring tender chicken, creamy Alfredo sauce, and pasta all rolled up in individual portions. This makes for an easy and delicious meal that’s perfect for dinner or a special occasion.

Ingredients:

For the Roll-Ups:

  • 12 lasagna noodles
  • 2 cups cooked chicken, shredded or diced (rotisserie chicken works great)
  • 1 1/2 cups ricotta cheese
  • 1 1/2 cups shredded mozzarella cheese (plus extra for topping)
  • 1/2 cup grated Parmesan cheese
  • 1 egg
  • 1 tablespoon chopped fresh parsley (optional, for garnish)
  • Salt and pepper, to taste

For the Alfredo Sauce:

  • 1/2 cup butter
  • 2 cloves garlic, minced
  • 2 cups heavy cream
  • 1 1/2 cups grated Parmesan cheese
  • 1 teaspoon Italian seasoning (optional)
  • Salt and pepper, to taste

Instructions:

Step 1: Prepare the Noodles

  1. Cook the lasagna noodles according to package directions, then drain and set aside. You can lay them flat on parchment paper or a clean kitchen towel to prevent them from sticking together.

Step 2: Make the Alfredo Sauce

  1. In a saucepan over medium heat, melt the butter. Add the minced garlic and sauté for about 1 minute until fragrant.
  2. Pour in the heavy cream and bring it to a gentle simmer. Stir occasionally.
  3. Gradually whisk in the Parmesan cheese, and let the sauce simmer for 2-3 minutes, stirring constantly, until it thickens slightly. Season with salt, pepper, and Italian seasoning to taste.
  4. Remove the sauce from heat and set aside.

Step 3: Prepare the Filling

  1. In a large bowl, combine the shredded chicken, ricotta cheese, 1 1/2 cups mozzarella, Parmesan cheese, egg, and a pinch of salt and pepper. Mix well until all ingredients are fully incorporated.

Step 4: Assemble the Roll-Ups

  1. Preheat your oven to 375°F (190°C).
  2. Spread a thin layer of Alfredo sauce on the bottom of a 9×13-inch baking dish.
  3. Take one lasagna noodle, and spread a generous amount of the chicken and cheese mixture along the noodle. Roll the noodle up tightly and place it seam-side down in the baking dish.
  4. Repeat with the remaining noodles and filling, arranging them side by side in the dish.

Step 5: Bake

  1. Once all the roll-ups are in the dish, pour the remaining Alfredo sauce over the top.
  2. Sprinkle extra shredded mozzarella cheese over the top of the roll-ups for a gooey, cheesy finish.
  3. Cover the baking dish with aluminum foil and bake for 25 minutes.
  4. After 25 minutes, remove the foil and bake for an additional 10 minutes, or until the cheese is golden and bubbly.

Step 6: Serve

  1. Let the lasagna roll-ups cool for a few minutes before serving.
  2. Garnish with fresh parsley if desired.

Tips:

  • You can add spinach, mushrooms, or other veggies to the filling for extra flavor and nutrition.
  • If you prefer a lighter version, you can substitute the heavy cream with a lighter cream or half-and-half.
  • These roll-ups can be assembled ahead of time and stored in the fridge for up to a day before baking.
