Cheesy Carrot Flatbreads are a delicious, savory snack or side dish packed with fresh flavor. The combination of sweet carrots, gooey cheese, and soft flatbread is irresistible. Here’s a simple recipe you can make at home:

Ingredients:

  • For the Flatbread Dough:
    • 2 cups all-purpose flour (plus extra for rolling)
    • 1 teaspoon baking powder
    • 1/2 teaspoon salt
    • 1 tablespoon olive oil
    • 3/4 cup warm water (adjust if needed)
  • For the Topping:
    • 1 cup grated carrots (about 2 medium carrots)
    • 1 cup shredded cheese (cheddar, mozzarella, or a blend)
    • 1/4 cup sour cream or Greek yogurt (optional, for creaminess)
    • 2 tablespoons fresh parsley or cilantro, chopped (optional)
    • 1 tablespoon olive oil (for brushing)
    • Salt and pepper, to taste
    • 1/2 teaspoon ground cumin (optional, for extra flavor)

Instructions:

1. Prepare the Flatbread Dough:

  1. In a large bowl, combine flour, baking powder, and salt. Mix well.
  2. Add olive oil and warm water, stirring until the dough comes together. You may need to adjust the water slightly to achieve a soft, non-sticky dough.
  3. Knead the dough on a floured surface for about 3-5 minutes, until smooth and elastic. Cover the dough with a damp cloth and let it rest for 15-20 minutes.

2. Prepare the Carrot Topping:

  1. While the dough is resting, grate the carrots using a box grater or food processor.
  2. In a medium bowl, combine the grated carrots, shredded cheese, and sour cream (if using). Stir until well mixed. Season with salt, pepper, and cumin (optional). Add fresh parsley or cilantro if desired.

3. Shape the Flatbreads:

  1. Once the dough has rested, divide it into 4 equal portions.
  2. Roll each portion into a ball and then flatten it into a disc about 1/4 inch thick using a rolling pin. Dust with extra flour if needed to prevent sticking.

4. Cook the Flatbreads:

  1. Heat a large skillet or griddle over medium-high heat and brush with a little olive oil.
  2. Place one of the dough discs in the skillet and cook for about 2-3 minutes on each side, until golden brown and slightly puffed. You may need to press the dough down gently with a spatula for even cooking.
  3. Once cooked, remove from the skillet and repeat with the remaining dough discs.

5. Assemble the Cheesy Carrot Flatbreads:

  1. After cooking all the flatbreads, spread the cheesy carrot mixture evenly on top of each flatbread, pressing it down gently.
  2. Return the flatbreads to the skillet or place them in a preheated oven at 350°F (175°C) for about 5 minutes, or until the cheese is melted and bubbly.
  3. Alternatively, you can briefly broil the flatbreads for 2-3 minutes to melt the cheese.

6. Serve:

  • Once the cheese has melted, remove the flatbreads from the skillet or oven.
  • Slice and serve warm as a snack, appetizer, or side dish.

Tips:

  • Vary the Cheese: Feel free to experiment with different cheeses like goat cheese, feta, or parmesan for unique flavors.
  • Add a Protein: You can add cooked chicken, chickpeas, or ham on top of the carrot and cheese mixture for a more substantial meal.
  • Gluten-Free Option: Use a gluten-free flour blend to make the flatbreads suitable for those with gluten sensitivities.
