Creamy Cucumber Salad is a refreshing and simple dish that’s perfect for warm weather or as a side dish for various meals. Here’s a basic recipe for a delicious Creamy Cucumber Salad:

Ingredients:

  • 3 large cucumbers, thinly sliced
  • 1 small red onion, thinly sliced
  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 2 tablespoons white vinegar
  • 1 tablespoon sugar
  • 1 teaspoon dried dill (or 1 tablespoon fresh dill, chopped)
  • Salt and pepper to taste

Instructions:

  1. Prepare the Vegetables:
    • Wash and peel the cucumbers if desired. Thinly slice them using a mandoline or a sharp knife.
    • Peel and thinly slice the red onion.
  2. Make the Dressing:
    • In a mixing bowl, combine sour cream, mayonnaise, white vinegar, sugar, and dried dill. Whisk until the ingredients are well combined.
    • If you’re using fresh dill, chop it finely and add it to the dressing.
  3. Combine Ingredients:
    • Add the sliced cucumbers and red onion to the dressing.
    • Gently toss the vegetables until they are well coated with the creamy dressing.
  4. Season:
    • Season the salad with salt and pepper to taste. Remember, cucumbers release water, so don’t oversalt initially.
  5. Chill:
    • Cover the bowl with plastic wrap and let the salad chill in the refrigerator for at least 1-2 hours before serving. This allows the flavors to meld.
  6. Serve:
    • Before serving, give the salad a quick toss. Taste and adjust the seasoning if necessary.
    • Optionally, garnish with a bit of fresh dill on top.

Tips:

  • If you prefer a milder onion flavor, you can soak the sliced red onions in cold water for about 10-15 minutes before adding them to the salad.
  • You can customize this salad by adding other ingredients like cherry tomatoes, feta cheese, or olives.
  • Adjust the sweetness and tanginess of the dressing by modifying the amount of sugar and vinegar to suit your taste.
