Ingredients:

  • 1 lb (450g) breakfast sausage (mild or spicy, depending on preference)
  • 1 1/2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup milk
  • 2 large eggs
  • 1/4 cup melted butter (or vegetable oil)
  • 1/2 cup shredded cheese (cheddar, mozzarella, or your choice)
  • Optional: 1/4 cup chopped green onions or herbs (like parsley or thyme) for extra flavor

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 375°F (190°C). Grease or line a muffin tin with paper liners.
  2. Cook the Sausage:
    • In a skillet, cook the sausage over medium heat until browned and fully cooked, breaking it up into small pieces as it cooks. Drain any excess fat and set the sausage aside to cool slightly.
  3. Prepare the Dry Ingredients:
    • In a large bowl, whisk together the flour, baking powder, salt, and pepper.
  4. Mix the Wet Ingredients:
    • In a separate bowl, whisk together the milk, eggs, and melted butter (or oil).
  5. Combine the Wet and Dry Ingredients:
    • Add the wet ingredients to the dry ingredients and stir until just combined. Be careful not to overmix.
  6. Add the Sausage and Cheese:
    • Fold in the cooked sausage and shredded cheese (and any optional herbs or green onions) until evenly distributed throughout the batter.
  7. Fill the Muffin Tin:
    • Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
  8. Bake the Muffins:
    • Bake for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean and the tops are golden brown.
  9. Cool and Serve:
    • Let the muffins cool in the pan for a few minutes before transferring them to a wire rack to cool completely.

Tips:
