It sounds like you’re looking for a cauliflower soup recipe that might have contributed to your weight loss journey. Here’s a simple, healthy cauliflower soup recipe that could be part of a balanced diet:

Cauliflower Soup Recipe

Ingredients:

  • 1 medium cauliflower (about 600g), chopped into florets
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil (or you can use vegetable broth for a lower-calorie option)
  • 1 large carrot, peeled and chopped
  • 4 cups vegetable broth (low-sodium)
  • 1/2 teaspoon ground turmeric (optional, for added flavor)
  • 1/4 teaspoon ground pepper
  • Salt to taste
  • Fresh herbs (like thyme or parsley) for garnish (optional)

Instructions:

  1. Prepare the vegetables:
    • Chop the cauliflower into florets, peel and chop the carrot, and chop the onion and garlic.
  2. Sauté the onions and garlic:
    • In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic and sauté for about 5 minutes, until they become soft and fragrant.
  3. Add the cauliflower and carrot:
    • Add the cauliflower florets and chopped carrot to the pot. Stir everything together.
  4. Add the broth and spices:
    • Pour in the vegetable broth. Add turmeric, pepper, and salt (to taste). Bring the mixture to a boil, then reduce the heat and let it simmer for 20–25 minutes, or until the cauliflower and carrots are soft and tender.
  5. Blend the soup:
    • Once the vegetables are tender, remove the pot from the heat. Use an immersion blender to puree the soup until smooth. Alternatively, you can transfer the soup to a regular blender in batches (be careful, as the soup will be hot).
  6. Serve:
    • Taste the soup and adjust the seasoning if necessary. Serve hot, garnished with fresh herbs if desired.

Tips:

  • For a creamier soup, you can add a splash of unsweetened almond milk or a spoonful of Greek yogurt after blending.
  • You can make this soup in advance and store it in the fridge for up to 4 days or freeze it for later use.

This cauliflower soup is low in calories, high in fiber, and packed with nutrients, making it a great addition to a weight-loss-friendly diet. Enjoy!
