A Chicken and Potato Bake is a comforting, easy-to-make dish that combines tender chicken with flavorful, roasted potatoes in one pan. The best part? It’s simple to prepare and requires minimal clean-up. Here’s a delicious recipe for you:

Chicken and Potato Bake

Ingredients:

  • 4 bone-in, skin-on chicken thighs (or breasts if preferred)
  • 4 medium potatoes (Yukon Gold or Russet), cut into 1-inch cubes
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1/2 tsp onion powder
  • 1/2 tsp dried thyme (or rosemary)
  • Salt and pepper, to taste
  • 1/2 cup chicken broth (or white wine, for extra flavor)
  • Fresh parsley, chopped (optional, for garnish)
  • 1 tbsp butter (optional, for richness)

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. Prepare the chicken: Pat the chicken thighs dry with paper towels to ensure crispy skin. Season the chicken thighs with salt, pepper, garlic powder, paprika, onion powder, and dried thyme (or rosemary).
  3. Prepare the potatoes: In a large bowl, toss the potato cubes with olive oil, salt, pepper, and a little extra garlic powder or paprika if desired. Make sure the potatoes are evenly coated.
  4. Arrange the chicken and potatoes: In a large baking dish or sheet pan, place the seasoned chicken thighs in the center. Arrange the seasoned potatoes around the chicken, spreading them out in an even layer.
  5. Add the chicken broth: Pour the chicken broth (or white wine) into the baking dish, around the potatoes and chicken. This will help keep everything moist and create a flavorful sauce as it bakes.
  6. Bake: Roast the chicken and potatoes in the preheated oven for 40-50 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C), and the potatoes are fork-tender and golden brown. If you’d like extra crispy skin, you can broil the chicken for the last 3-5 minutes of cooking.
  7. Optional (for extra flavor): In the last 10 minutes of baking, you can add a little butter on top of the chicken for added richness and flavor.
  8. Serve: Once everything is done, remove the baking dish from the oven. Garnish the chicken and potatoes with fresh chopped parsley if desired. Serve hot and enjoy!

Tips:

  • Veggies: You can add other vegetables like carrots, bell peppers, or onions to the bake for extra flavor and nutrition. Just toss them with the potatoes and seasonings.
  • Chicken Breasts: If you prefer chicken breasts, they’ll work too, but they may cook faster, so check for doneness around 30-35 minutes.
