Banana Bread Cookies

Banana Bread Cookies combine the rich, sweet flavor of banana bread with the chewy, comforting texture of cookies! Perfect for a snack or dessert, these cookies are a great way to use up ripe bananas. Here’s a simple recipe for you:

Ingredients:

  • 1 ½ cups all-purpose flour
  • ½ teaspoon baking soda
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • ½ cup unsalted butter, softened
  • ¾ cup brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 ripe banana, mashed (about ½ cup)
  • 1 tablespoon milk (or as needed to adjust consistency)
  • ½ cup rolled oats (optional, but adds great texture)
  • ½ cup chopped walnuts or pecans (optional)
  • ½ cup chocolate chips (optional, but delicious!)

Directions:

1. Preheat the oven:

  • Preheat your oven to 350°F (175°C).
  • Line a baking sheet with parchment paper or a silicone baking mat.

2. Mix the dry ingredients:

  • In a medium bowl, whisk together the flour, baking soda, cinnamon, and salt.

3. Cream the butter and sugar:

  • In a large mixing bowl, beat the softened butter and brown sugar together until light and fluffy (about 2-3 minutes).
  • Add the egg and vanilla extract and beat until combined.

4. Add the banana:

  • Stir in the mashed ripe banana. If your banana is too thick, you can add a tablespoon of milk to help loosen up the batter.

5. Combine the dry and wet ingredients:

  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  • If you’re adding oats, nuts, or chocolate chips, fold them into the batter now.

6. Scoop the dough:

  • Use a tablespoon or cookie scoop to drop rounded spoonfuls of dough onto the prepared baking sheet. Leave about 2 inches of space between each cookie to allow for spreading.

7. Bake the cookies:

  • Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown and the center is set.
  • Let the cookies cool on the baking sheet for 2-3 minutes before transferring them to a wire rack to cool completely.

Serve & Enjoy:

These Banana Bread Cookies are soft, chewy, and full of banana flavor, just like banana bread but in cookie form. Enjoy them fresh out of the oven or store them in an airtight container for a few days.
