Ingredients:

    • 1/2 cup powdered sugar
    • 1 tsp vanilla extract
    • 1 cup heavy whipping cream
    • 2 tbsp sour cream (optional, for tang)
  • For the Fruit Medley:
    • 1 cup strawberries, hulled and sliced
    • 1 cup blueberries
    • 1 cup grapes, halved (or any other fruit you prefer, like pineapple or kiwi)
    • 1/2 cup pineapple chunks (fresh or canned)
    • 1 ripe banana, sliced (optional, as bananas can brown quickly)

Optional Garnishes:

  • Fresh mint leaves
  • A sprinkle of graham cracker crumbs (for a bit of cheesecake crust flavor)
  • Extra whipped cream or a drizzle of honey

Instructions:

  1. Prepare the Cheesecake Filling: In a medium-sized bowl, beat the softened cream cheese until smooth and creamy using a hand mixer or stand mixer. Gradually add powdered sugar and vanilla extract, beating until combined. Add sour cream, if using, and mix until smooth.
  2. In a separate bowl, whip the heavy cream until stiff peaks form (you can do this by hand or with a mixer). Gently fold the whipped cream into the cream cheese mixture. This creates a light, fluffy cheesecake filling.
  3. Assemble the Fruit Medley: In a large mixing bowl, combine all your fresh fruit (strawberries, blueberries, grapes, pineapple, and bananas). Gently toss to combine.
  4. Serve: Spoon the fruit into individual bowls or a large serving dish, then top with a generous dollop of the cheesecake filling. You can swirl the filling through the fruit for a marbled effect or layer it on top for more contrast.
  5. Garnish: Optionally, sprinkle graham cracker crumbs over the top for a bit of cheesecake crust texture or add fresh mint leaves for a pop of color.
  6. Chill (optional): If you have time, let the dessert chill for 30 minutes in the fridge to allow the flavors to meld together. Otherwise, it’s ready to serve immediately!
