Air Fryer Cheesy Taco Bombs are a fun, flavorful, and easy-to-make snack or appetizer! They’re packed with taco-seasoned ground beef, gooey melted cheese, and a crispy, golden crust, all cooked perfectly in the air fryer. Here’s a simple recipe to make these cheesy taco bombs:

Air Fryer Cheesy Taco Bombs

Ingredients:

  • 1 lb ground beef (or turkey, chicken, or vegetarian option)
  • 1 packet taco seasoning (or homemade seasoning)
  • 1/4 cup water (or as directed by taco seasoning)
  • 1 cup shredded cheese (cheddar, mozzarella, or a blend)
  • 1 can (8 oz) refrigerated biscuit dough (like Pillsbury or similar)
  • 1 tbsp olive oil or cooking spray (for greasing)
  • Optional toppings: sour cream, salsa, guacamole, or chopped cilantro

Instructions:

  1. Cook the Ground Beef:
    • In a skillet over medium heat, cook the ground beef until browned, breaking it apart with a spoon. Drain any excess fat.
    • Add the taco seasoning and water to the beef, stirring to combine. Simmer for 5 minutes, until the mixture thickens and is well-coated with seasoning. Remove from heat and set aside.
  2. Prepare the Biscuit Dough:
    • Open the can of biscuit dough and separate each biscuit. Flatten each one into a small circle with your hands or a rolling pin (about 3-4 inches in diameter). You can also press them into a muffin tin to keep them round.
  3. Assemble the Taco Bombs:
    • Place a spoonful of the seasoned ground beef mixture in the center of each flattened biscuit.
    • Add a generous spoonful of shredded cheese on top of the beef.
    • Carefully fold the edges of the biscuit around the filling, pinching the dough together to seal it into a ball shape. Make sure it’s sealed tightly so the cheese doesn’t ooze out during cooking.
  4. Air Fry the Taco Bombs:
    • Preheat your air fryer to 375°F (190°C) for about 5 minutes.
    • Lightly spray the air fryer basket with cooking spray or brush it with olive oil to prevent sticking.
    • Place the taco bombs in a single layer in the air fryer basket, leaving space between each one.
    • Air fry at 375°F for 8-10 minutes, or until the biscuit dough is golden brown and crispy, and the cheese is melted inside. You may need to flip them halfway through for an even cook.
  5. Serve:
    • Once cooked, remove the taco bombs from the air fryer and let them cool for a couple of minutes before serving.
    • Serve with sour cream, salsa, guacamole, or your favorite dipping sauce.

Tips:

  • Customizations: You can add additional taco toppings to the beef mixture, such as diced onions, bell peppers, or black beans.
  • Cheese: Feel free to experiment with different cheeses, like Monterey Jack or pepper jack, for extra flavor and spice.
  • Meat Variations: If you prefer ground chicken or turkey, those work just as well. For a vegetarian option, you can swap the meat for black beans or a plant-based meat alternative.
