Ingredients:

  • 1 lb hot Italian sausage (you can also use mild sausage if you prefer less heat)
  • 8 oz cream cheese, softened
  • 1 cup shredded cheddar cheese (sharp or mild, depending on preference)
  • 1 cup shredded mozzarella cheese
  • 1/2 cup beer (use a light beer, lager, or ale for best flavor)
  • 1/2 cup milk (or more if needed for consistency)
  • 1 tablespoon Dijon mustard (optional, for a bit of tang)
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon smoked paprika (optional, for extra smokiness)
  • Salt and pepper, to taste
  • Chopped green onions or fresh parsley (optional, for garnish)
  • Tortilla chips, crackers, or bread for serving

Instructions:

1. Cook the Sausage:

  • In a large skillet over medium heat, crumble and cook the sausage until browned and fully cooked, about 5-7 minutes. Break it apart as it cooks.
  • Once the sausage is cooked, drain any excess grease, and set the cooked sausage aside.

2. Make the Cheese Base:

  • In a medium saucepan over low to medium heat, combine the softened cream cheese, shredded cheddar cheese, and mozzarella cheese.
  • Slowly add the beer, milk, Dijon mustard (if using), garlic powder, onion powder, smoked paprika, and a pinch of salt and pepper. 3. Combine Sausage and Cheese Mixture:

  • Once the cheese mixture is smooth, add the cooked sausage to the saucepan and stir until fully combined. Taste and adjust seasoning with more salt, pepper, or mustard if desired.
  • Continue to cook for 2-3 more minutes to ensure everything is hot and well mixed.

4. Serve:
