My Famous Chicken Spaghetti

Famous Chicken Spaghetti Recipe

Ingredients:

  • 1 lb (about 2-3 chicken breasts or thighs), cooked and shredded
  • 12 oz spaghetti (or any pasta you prefer)
  • 1 (10.5 oz) can of cream of chicken soup (or use homemade if preferred)
  • 1 (10.5 oz) can of diced tomatoes with green chilies (like Rotel)
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup sour cream
  • 1/4 cup milk (add more if you prefer a creamier texture)
  • 1 medium onion, finely chopped
  • 1 bell pepper, chopped (optional)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp black pepper
  • Salt to taste
  • 2 tbsp olive oil (for sautéing)
  • Optional: 1/2 cup Parmesan cheese, fresh parsley or basil for garnish

Instructions:

  1. Cook the pasta: Start by cooking the spaghetti according to package instructions. Drain and set aside.

  2. Prepare the chicken: If you’re cooking chicken, season the chicken breasts or thighs with salt, pepper, and a bit of olive oil. Bake, grill, or sauté until fully cooked, then shred the chicken with a fork. (Alternatively, you can use leftover rotisserie chicken for extra ease.)

  3. Sauté the vegetables: In a large skillet, heat the olive oil over medium heat. Add the chopped onion (and bell pepper if using) and sauté until softened, about 3-5 minutes.

  4. Make the sauce: Add the can of cream of chicken soup, diced tomatoes (with juice), sour cream, and milk to the skillet. Stir until well combined. Add the garlic powder, onion powder, salt, and pepper, then let the sauce simmer for 5-7 minutes, stirring occasionally.

  5. Combine chicken and pasta: Add the shredded chicken to the sauce mixture and stir to combine. Then, toss in the cooked pasta and mix everything until the pasta is coated with the creamy sauce.

  6. Cheese time: Stir in 1/2 cup of mozzarella and 1/2 cup of cheddar cheese. Continue stirring until the cheese is melted and the sauce is creamy. You can add more cheese if you want it extra cheesy!

  7. Bake (optional): If you like a baked version, transfer the chicken spaghetti mixture into a greased 9×13-inch baking dish. Top with the remaining shredded cheese (cheddar and mozzarella) and sprinkle with Parmesan if desired. Bake in a preheated 350°F (175°C) oven for 20-25 minutes, or until the top is golden and bubbly.

  8. Garnish and serve: Once it’s out of the oven (if you baked it), let it cool for a few minutes. Garnish with fresh parsley or basil before serving.
