You can customize it with your favorite taco toppings, like cheese, sour cream, guacamole, or salsa. Here’s a simple and tasty recipe to make Taco Potatoes:

Taco Potatoes Recipe

Ingredients:

  • 4 large russet potatoes (or 6-8 smaller potatoes)
  • 1 lb ground beef (or turkey for a lighter version)
  • 1 packet taco seasoning (or homemade seasoning – see below)
  • 1/2 cup water (or as directed on taco seasoning packet)
  • 1 tbsp olive oil (for roasting potatoes)
  • Salt and pepper, to taste
  • 1 cup shredded cheddar cheese (or a mix of cheddar and Monterey Jack)
  • 1/2 cup sour cream (optional)
  • 1/2 cup salsa (optional)
  • 1/2 cup guacamole (optional)
  • 1/4 cup chopped green onions (optional)
  • 1/4 cup chopped cilantro (optional)
  • Jalapeño slices (optional, for added heat)

For Homemade Taco Seasoning (optional):

  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp cayenne pepper (optional for heat)

Instructions:

  1. Prepare the Potatoes:

    • Preheat your oven to 400°F (200°C).
    • Wash and scrub the potatoes, then cut them into small cubes (about 1-inch pieces).
    • Toss the potato cubes in olive oil, salt, and pepper. Spread them out evenly on a baking sheet lined with parchment paper.
    • Roast the potatoes in the preheated oven for 25-30 minutes, or until they are golden brown and crispy, stirring halfway through for even cooking.
  2. Cook the Ground Meat:

    • While the potatoes are roasting, heat a skillet over medium heat. Add the ground beef (or turkey) and cook until browned, breaking it up with a spoon as it cooks.
    • Once the meat is fully cooked, drain any excess fat and return it to the skillet.
    • Add the taco seasoning and water (or follow the instructions on your seasoning packet). Stir and let it simmer for 5-7 minutes, until the sauce thickens.
  3. Assemble the Taco Potatoes:

    • Once the potatoes are crispy and golden, remove them from the oven and transfer them to a large serving dish or individual bowls.
    • Top the potatoes with the seasoned ground meat mixture.
    • Sprinkle the shredded cheese over the meat and return the dish to the oven for 3-5 minutes, just until the cheese is melted.
  4. Garnish and Serve:

    • Once the cheese has melted, remove from the oven and add your favorite taco toppings, such as sour cream, salsa, guacamole, chopped green onions, cilantro, or jalapeño slices.
    • Serve immediately and enjoy!

Tips:

  • Vegetarian Option: You can use black beans, refried beans, or seasoned tofu instead of ground meat for a vegetarian version.
  • Extra Crunch: For even more crunch, you can sprinkle crushed tortilla chips over the top before adding the cheese and returning it to the oven.
  • Make Ahead: You can roast the potatoes and cook the taco meat ahead of time, then just assemble and bake when you’re ready to eat.
