Cowboy Casserole
Ingredients:
- 1 lb ground beef (or ground turkey)
- 1 medium onion, diced
- 1 can (15 oz) corn kernels, drained (or 1 1/2 cups frozen corn)
- 1 can (10.5 oz) cream of mushroom soup (or cream of chicken)
- 1/2 cup sour cream
- 2 cups shredded cheddar cheese (divided)
- 1 packet taco seasoning (or 2 tbsp homemade taco seasoning)
- 1 bag (32 oz) frozen tater tots
- Salt and pepper to taste
Instructions:

Preheat the oven:
Preheat your oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish. -
Cook the ground beef:
In a large skillet, cook the ground beef over medium heat until browned, breaking it apart with a spoon as it cooks. Drain any excess fat. -
Add the seasoning and vegetables:
Add the diced onion to the skillet and cook until softened, about 3-4 minutes. Stir in the taco seasoning, corn, cream of mushroom soup, and sour cream. Mix well and cook for another 2-3 minutes until everything is well combined and heated through. Season with salt and pepper to taste. -
Assemble the casserole:
Pour the beef mixture into the prepared baking dish and spread it out evenly. Sprinkle 1 1/2 cups of shredded cheddar cheese over the top. -
Top with tater tots:
Arrange the frozen tater tots in an even layer on top of the casserole. -
Bake:
Bake for 25-30 minutes, or until the tater tots are golden brown and crispy, and the casserole is bubbling around the edges. -
Add remaining cheese:
Remove from the oven and sprinkle the remaining 1/2 cup of cheddar cheese over the top. Return the casserole to the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly. -
Serve:
Let the casserole cool for a few minutes before serving. Garnish with fresh herbs like parsley or cilantro, if desired.
