CAULIFLOWER MAC N’ CHEESE

Certainly! Here’s a recipe for cauliflower macaroni and cheese, a healthier twist on the classic comfort food:

Ingredients:

  • 1 medium-sized cauliflower, cut into small florets
  • 8 ounces elbow macaroni (or any pasta of your choice)
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 2 cups milk
  • 2 cups shredded sharp cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • 1/2 teaspoon mustard (optional, for flavor)
  • 1/4 teaspoon garlic powder (optional, for flavor)
  • Chopped parsley for garnish (optional)

Instructions:

  1. Prepare the Cauliflower and Pasta:
    • Preheat the oven to 375°F (190°C).
    • Bring a large pot of salted water to a boil. Add the cauliflower florets and cook for about 5 minutes until they are tender but not mushy. Remove the cauliflower with a slotted spoon and set aside.
    • In the same pot, cook the macaroni according to the package instructions until al dente. Drain and set aside.
  2. Make the Cheese Sauce:
    • In a large saucepan, melt the butter over medium heat.
    • Stir in the flour and cook for about 1-2 minutes, until it forms a smooth paste (roux).
    • Gradually whisk in the milk, stirring constantly to avoid lumps.
    • Continue cooking and stirring until the mixture thickens, about 5-7 minutes.
    • Add the shredded cheddar and Parmesan cheeses, stirring until melted and smooth.
    • Season the cheese sauce with salt, pepper, mustard, and garlic powder (if using). Adjust the seasonings to taste.
  3. Combine Cauliflower, Pasta, and Cheese Sauce:
    • Add the cooked cauliflower and macaroni to the cheese sauce. Stir until the cauliflower and pasta are well-coated with the cheese sauce.
  4. Bake in the Oven:
    • Transfer the mixture to a baking dish.
    • Bake in the preheated oven for about 20-25 minutes or until the top is golden and the edges are bubbly.
  5. Serve:
    • Remove from the oven and let it cool for a few minutes.
    • Garnish with chopped parsley if desired.
    • Serve hot and enjoy your cauliflower mac ‘n’ cheese!

This cauliflower macaroni and cheese is a tasty and nutritious alternative to the traditional version. Feel free to customize it by adding other vegetables or your favorite seasonings.
