🍰 Dr Pepper Cake
Ingredients:
Cake:

1 cup Dr Pepper (not diet)

½ cup vegetable oil

½ cup (1 stick) unsalted butter

¼ cup unsweetened cocoa powder

2 cups all-purpose flour

2 cups granulated sugar

1 tsp baking soda
-
½ tsp salt
-
2 large eggs
-
½ cup buttermilk
-
1 tsp vanilla extract
Optional:

1 cup mini marshmallows (some Southern versions include this!)
Frosting (Dr Pepper Chocolate Icing):

½ cup unsalted butter
-
¼ cup Dr Pepper
-
¼ cup unsweetened cocoa powder
-
3–4 cups powdered sugar
-
1 tsp vanilla extract
-
Pinch of salt
Instructions:
🔹 Make the Cake:

Preheat Oven:
350°F (175°C). Grease and flour a 9×13-inch pan. -
Heat Wet Mixture:
In a saucepan, combine Dr Pepper, oil, butter, and cocoa powder. Heat over medium until it just starts to boil, stirring to combine. Remove from heat. -
Mix Dry Ingredients:
In a large bowl, whisk together flour, sugar, baking soda, and salt. -
Combine:
Slowly pour the warm Dr Pepper mixture into the dry ingredients and mix well. -
Add Eggs, Buttermilk, and Vanilla:
Stir in eggs, buttermilk, and vanilla until smooth. Fold in marshmallows if using. -
Bake:
Pour batter into prepared pan. Bake for 30–35 minutes, or until a toothpick comes out clean.
🔹 Make the Frosting:

In a saucepan, heat butter, Dr Pepper, and cocoa powder until it just comes to a boil.

Remove from heat and gradually whisk in powdered sugar, vanilla, and salt until smooth and spreadable.

Pour over warm cake and spread evenly.
