✨ What Makes Them Special?

These fritters are soft and sweet on the inside from the onions, with a perfectly crisp and golden outside. The batter is simple, using pantry staples, and the result is pure, old-fashioned comfort food.


🍽️ Ingredients:

  • 2 large sweet onions, finely chopped or thinly sliced

  • 1 cup all-purpose flour

  • 1 tbsp cornmeal (adds extra crunch)

  • 1 tbsp sugar

  • 1 tbsp baking powder

  • 1 tsp salt

  • 1/2 tsp black pepper

  • 1/2 tsp paprika (optional for color and mild spice)

  • 1 cup milk

  • 1 egg, beaten

  • Vegetable oil for frying

  1. Prepare the Batter:

    • In a large bowl, mix the flour, cornmeal, sugar, baking powder, salt, pepper, and paprika.

    • Add milk and beaten egg to the dry ingredients. Stir until smooth.

    • Fold in the chopped onions, making sure they’re evenly coated in the batter.

  2. Heat the Oil:

    • In a skillet or deep pan, heat about 1/2 inch of oil over medium heat.

    • To test the oil, drop in a small bit of batter. It should sizzle and begin to brown in about 1 minute.

  3. Fry the Fritters:

    • Drop spoonfuls of batter into the hot oil, flattening slightly with the back of the spoon.

    • Fry 2–3 minutes per side, or until golden brown and crispy.

    • Remove and drain on a paper towel–lined plate.

  • Use Vidalia onions or yellow onions for extra sweetness.

  • For extra crispness, chill the batter for 10–15 minutes before frying.

  • Add a pinch of cayenne or hot sauce for a spicy kick.

  • You can also bake them at 400°F (200°C) for 20 minutes, flipping halfway, for a lighter version (though less crispy).
