🧂 Ingredients (Serves 4)

For the Cajun Chicken:

  • 2 large chicken breasts, sliced thin

  • 1½ tbsp Cajun seasoning (store-bought or homemade)

  • 1 tbsp olive oil

  • Salt & pepper, to taste

For the Pasta & Sauce:

  • 12 oz linguine or fettuccine

  • 3 tbsp butter

  • 4 cloves garlic, minced

  • 1½ cups heavy cream

  • 1 cup low-sodium chicken broth

  • 1½ cups shredded mozzarella cheese

  • ½ cup Parmesan cheese, grated

  • Salt, pepper & crushed red pepper (to taste)

  • Optional: chopped parsley or green onions for garnish


👩‍🍳 Instructions

1. Cook the Pasta:

  • Cook linguine in salted boiling water until al dente. Reserve ½ cup of pasta water, then drain and set aside.

2. Season & Cook Chicken:

  • Toss sliced chicken with Cajun seasoning, salt, and pepper.

  • In a large skillet, heat olive oil over medium-high heat. Sear chicken until golden and cooked through (about 3–4 minutes per side). Remove and keep warm.

3. Make the Garlic Mozzarella Sauce:

  • In the same pan, melt butter and sauté garlic for 30 seconds until fragrant.

  • Add cream and chicken broth. Bring to a simmer, then reduce heat to low.

  • Stir in mozzarella and Parmesan, whisking until smooth and melted.

  • Season with salt, pepper, and a pinch of crushed red pepper for heat.

4. Combine & Serve:

  • Toss cooked pasta in the sauce, adding reserved pasta water as needed for creaminess.

  • Slice the Cajun chicken and serve on top.

  • Garnish with fresh parsley or green onions.

  • Spicier version: Add cayenne or extra Cajun seasoning to the sauce.
