S’mores Bars

These S’mores Bars deliver all the gooey, chocolatey, marshmallowy magic of campfire s’mores — no fire pit required! Perfect for bake sales, potlucks, or a fun family treat, they’re layered with graham cracker crust, melty chocolate, and toasted marshmallows in one irresistible bite.

🧁 Ingredients (Makes about 16 bars)

For the Graham Cracker Base:

  • 1½ cups graham cracker crumbs (about 10 full sheets)

  • ½ cup (1 stick) unsalted butter, melted

  • ¼ cup brown sugar

For the Filling:

  • 1½ cups milk chocolate chips or chopped Hershey bars

  • 1 cup mini marshmallows

  • Optional: ½ cup marshmallow creme (for extra gooeyness)

For the Topping:

  • 1½ cups mini marshmallows

  • Optional: extra chocolate chips or graham pieces for garnish


👩‍🍳 Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8 or 9×9 inch baking dish with parchment paper or foil, and lightly grease.

  2. Make the crust:

    • In a bowl, mix graham crumbs, melted butter, and brown sugar until combined.

    • Press evenly into the bottom of the pan to form a crust.

  3. Add the chocolate & marshmallows:

    • Sprinkle chocolate chips evenly over the crust.

    • Top with 1 cup of mini marshmallows (and dollops of marshmallow creme, if using).

  4. Bake:

    • Bake for 15–17 minutes, until the marshmallows are puffed and golden and the chocolate is melty.

  5. Add topping & finish baking:

    • Remove from oven and sprinkle remaining 1½ cups mini marshmallows on top.

    • Return to oven for 3–5 more minutes or until lightly toasted.

    • For a campfire look, broil for 30 seconds — watch closely!

  6. Cool & slice:

    • Let cool completely (for cleaner slicing, refrigerate for 30–60 minutes).

    • Slice into bars and enjoy!


💡 Tips & Variations:

  • Add peanut butter chips or caramel drizzle for a flavor twist

  • Use dark chocolate for a less-sweet version

  • Press in Reese’s or Snickers pieces for extra indulgence

  • Make them gluten-free using GF graham crackers
