Oh, yes! 🍪✨ No-Bake Salted Caramel Cookies are pure magic — rich, chewy, buttery caramel flavor with that perfect touch of sea salt, all without turning on the oven. Perfect for when you want something sweet and indulgent but easy and quick!

Here’s a delicious recipe for you:


🧂🍯 No-Bake Salted Caramel Cookies

Ingredients (Makes about 12-15 cookies):

For the caramel base:
  • 1 cup rolled oats (old-fashioned)

  • ½ cup unsweetened shredded coconut (optional, for texture)

  • ½ cup smooth peanut butter or almond butter

  • ⅓ cup brown sugar

  • 3 tbsp unsalted butter

  • 3 tbsp milk (any kind)

  • 1 tsp vanilla extract

  • ½ tsp fine sea salt (plus extra for sprinkling)


Instructions:

  1. Prepare the caramel mixture:

    • In a medium saucepan, melt the butter over medium heat.

    • Add brown sugar and milk, stirring constantly.

    • Bring the mixture to a gentle boil for 2 minutes, stirring continuously.

    • Remove from heat, stir in peanut butter, vanilla extract, and salt until smooth.

  2. Mix dry ingredients:

    • In a large bowl, combine oats and shredded coconut (if using).

  3. Combine:

    • Pour the warm caramel mixture over the oats and stir until fully combined.

  4. Form cookies:

    • Using a spoon or cookie scoop, drop dollops of the mixture onto a parchment-lined baking sheet.

    • Flatten slightly with the back of a spoon.

  5. Chill:

    • Refrigerate for at least 1 hour until firm.

  6. Finish:

    • Sprinkle a tiny pinch of flaky sea salt on top of each cookie just before serving for that salted caramel punch!

  • Swap peanut butter for almond or cashew butter.
