🍅 Refreshing Tomato & Artichoke Salad with Capers

📝 Ingredients (Serves 4):

  • 1 pint (2 cups) cherry or grape tomatoes, halved

  • 1 can (14 oz) artichoke hearts, drained and quartered (marinated or in water)

  • 2 tbsp capers, drained

  • ¼ cup red onion, thinly sliced

  • 2 tbsp fresh parsley, chopped

  • Optional: ¼ cup crumbled feta or shaved Parmesan

  • Optional: ½ cup cucumber, chopped (for added crunch)


🫒 For the Dressing:

  • 3 tbsp extra virgin olive oil

  • 1 tbsp red wine vinegar (or lemon juice for extra brightness)

  • ½ tsp Dijon mustard

  • 1 small clove garlic, finely minced

  • Salt & pepper to taste

  • Optional: Pinch of oregano or crushed red pepper flakes


🥣 Instructions:

  1. Make the dressing:
    In a small bowl or jar, whisk together olive oil, vinegar, mustard, garlic, salt, pepper, and any optional herbs.

  2. Assemble the salad:
    In a large bowl, combine tomatoes, artichokes, capers, onion, and parsley. Add cucumber or cheese, if using.

  3. Toss and chill:
    Pour dressing over the salad and toss gently to coat. Let sit for 10–15 minutes to let the flavors mingle (or refrigerate for up to 2 hours before serving).

  4. Serve:
