1. Blind bake the crust:

If using raw pie dough, bake according to package or recipe instructions until golden brown.

Let it cool completely.
2. Make the filling:

In a medium saucepan, whisk together sugar, cocoa powder, cornstarch, and salt.

Add egg yolks and slowly whisk in milk until smooth.
3. Cook until thick:

Cook over medium heat, whisking constantly, until the mixture thickens and bubbles β about 8β10 minutes.

Once thickened (like pudding), remove from heat and stir in butter and vanilla until smooth.
4. Pour & chill:

Pour the filling into the cooled pie crust.

Press plastic wrap directly onto the surface to prevent a skin from forming.

Refrigerate for at least 4 hours, or until fully set.
5. Top & serve:

Before serving, top with whipped cream or a lightly toasted meringue, if desired.
